Recipe for 2
1 sea bass (about 400-500g.)
1 lemon, cut into wedges
1 large onion, cut into thick slices
1 large tomato, cut into thick slices
3 tablespoons olive oil
Juice of one lemon
1 tablespoon dry oregano
1 teaspoon chopped ginger
1/3 teaspoon freshly ground black pepper
1/2 teaspoon salt
Place in a bowl the lemon juice, olive oil, oregano, ginger, salt and pepper. Mix well and let stand for at least one hour to marinade itself.
Preheat the oven to 180oC.
Wash thoroughly the fish and place in a large fireproof dish. Place in a large mixing bowl the onions, lemon wedges, and the mixture of olive oil and lemon. Toss the ingredients in the mixing bowl to coat with the olive oil. Pour the ingredients in the bowl over the sea bass. Arrange the sliced tomato over the fish and cover with aluminium foil.
Bake the fish in the oven for 25-30 minutes. The last 5 minutes remove the foil.
Serve the fish straight from the oven with baked potatoes and steamed vegetables. Enjoy!
