Recipe for 2
Ingredients:
1 loaf ciabatta bread (enough for 2 people)
1 chicken breast, no skin and bread, grilled
1 small onion, chopped
4 slices bacon
5-6 sundried tomatoes, chopped
2 tablespoons pickled capers
2 tablespoons olive oil
4 slices Gouda cheese
Preparation:
Cut the cooked chicken into small cubes.
In a medium frying pan, cook the bacon (without oil) turning it occasionally. Remove bacon from pan and set aside.
In the same pan, heat oil and add onion. Sauté until translucent and add the chicken, stirring often. Add the sundried tomatoes and capers. Stir for 2-3 minutes until the flavors combine and remove the pan from heat.
Cut the bread lengthwise. With a spoon, place a layer of chicken mixture on one side of the bread. Over the chicken place the cheese and the cooked bacon.
Cover the sandwich with the other half of the bread and divide into two portions. Toast the sandwiches in a toaster for 4-5 minutes.
Serve hot with French fries and ketchup. Enjoy!
