Cream of Mushroom Soup (Easy Recipe)

Recipe for 4-6

Ingredients:
3 cups sliced mushrooms
1 large onion grated
1 garlic clove minced
3 tablespoons butter
2 tablespoons flour
3 cups chicken broth
1 1/2 cups fresh cream
1/3 teaspoon salt
1/3 teaspoon black pepper, powder
1/3 teaspoon grated nutmeg
1 sprig thyme (optional)

Preparation:

Melt the butter in a large sauce pan. Saute the sliced mushrooms for 3-4 minutes. Add the onion and garlic and cook for a couple of minutes.
Add the flour and stir for a couple of minutes. Season with nutmeg, salt and pepper and add the chicken broth and fresh thyme.
Bring to a boil and simmer for 20 minutes. Remove from heat the sauce pan and let the soup cool down for at least 15 minutes. Add the fresh cream and stir well. Bring to boil and simmer for 8 minutes.
Before serving remove the thyme.
Serve hot with croutons. Enjoy!
