Recipe for 6
1 whole chicken (about 3kg)
3-4 tablespoons butter (at room temperature)
4 large potatoes (chopped in half)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sweet paprika
1 tablespoon oregano
4-5 whole cardamom seeds
Preheat oven to 180oC.
In a small bowl, mix together all spices (salt, pepper, paprika and oregano) except of cardamom. Wash thoroughly the chicken (inside-out). Using the mixture of spices, sprinkle the chicken (inside-out) and place in a big enough baking dish (breast up).
With your hands rub the chicken all over with butter. Make sure you spread butter also inside the chicken. Place the potatoes around the chicken and sprinkle over them some salt and oregano. Press gently the cardamom seeds one by one to open a little bit and place among the potatoes.
Cover with foil and place in preheated oven. The chicken needs about 45-50 minutes cooking per kg. Halfway through the baking, remove the foil and occasionally, using a spoon, collect juices and pour them over the chicken. This will keep the chicken juicy inside and create a nice crust outside.
Serve hot with fresh salad. Enjoy!
