Recipe for 3-4
1 whole chicken breast, no bone and skin
4 tablespoons light or fat-free mayonnaise
1/2 cup celery stalks, chopped
1 small onion thinly chopped
1 red or green bell pepper, thinly chopped
1 small bunch of parsley, thinly chopped
2 tablespoons fat-free (or reduced fat) cream cheese
1/2 teaspoon salt
Juice of one lemon
Place the chicken breast in a pot covered with water and add a pinch of salt. Simmer for approximately 40-50 minutes until done. Remove and drain. Set aside and let to cool.
When chicken is cold enough chop it into small cubes and place into a large salad bowl. Add the celery, onion, bell peppers, and parsley.
In another smaller bowl, combine mayonnaise, cream cheese, salt and lemon juice and mix well. Add the dressing in the salad bowl with the chicken and toss all ingredients to mix well.
You may serve it atop on whole wheat toasted bread as a sandwich or simply in individual salad bowls with fresh bread on the side. Enjoy!
