Stuffed Potato Skins (American Recipe)

Recipe for 4-6

Ingredients:
6 potatoes, medium sized
1 cup bacon slices, cubed
2 cups cheddar cheese, grated2 cups chopped scallions
Sour cream (optional)
2 tablespoons olive oil
Vegetable oil for frying

Preparation:
Wash thoroughly the potatoes and bake for jacket until done. Cut in half. Scrape out middle with spoon leaving some potato left on the skins. Place enough vegetable oil in a frying pan and deep fry the skins until golden brown. Drain on paper towel.
In another frying pan heat the olive oil and stir fry bacon and scallion for 2 minutes. Stuff the potato skins with bacon and scallions. Sprinkle the stuffed potato skins with cheese on top. Bake on 210oC until cheese melts.
Serve hot with sour cream on the side. Enjoy!
