Baked Swordfish with Potatoes (Mediterranean Recipe)

Recipe for 6

1kg swordfish, in filets
4 medium sized potatoes, cubed
1 large onion, thickly chopped
2 cloves garlic, thinly chopped
1/2 cup. Olive oil
juice of one large lemon
1 red or green bell pepper, thickly chopped
1 tablespoon mustard
1 tablespoon tomato paste
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 small bunch parsley, chopped

Wash the swordfish fillets and place in an oven pan. Add potatoes, onion, garlic and pepper. Mix the ingredients gently, taking care not to "break" the swordfish steaks. Pour over the ingredients the olive oil.
In a small bowl add the salt, black pepper, lemon juice, mustard and tomato paste. Add a glass of water and stir to combine.Pour the sauce you just made into the oven pan. Check if some more water is needed and add. The liquids in the oven pan should not cover the other ingredients.
Place pan in the oven and bake at 200 degrees for 50 minutes or until the tomatoes are done.
Serve garnished with the chopped fresh parsley and fresh bread on the side. Enjoy!
