Tuna Melt (Hoosiers Recipe)

Recipe for 4

Ingredients:
2 cans white tuna in water, drained
1/4 cup mayonnaise
1/4 cup finely chopped celery
1/4 cup finely chopped onion
1 tablespoon chopped parsley
1 teaspoon red wine vinegar
1½ tablespoon olive oil
1/3 teaspoon powdered ginger
1/3 teaspoon salt
1/3 teaspoon freshly ground black pepper
8 slices bread (of your choice)
8 slices Swiss cheese
4 slices tomato

Preparation:
Preheat an electric grill to medium. In case you do not have an electric grill you might use a grill pan (place it on medium heat).
In a bowl, mix the tuna, mayonnaise, celery, onion, parsley, olive oil and vinegar. Season with ginger, salt, pepper and mix well.
Assemble the sandwiches by laying 4 slices of bread on a flat surface. Place on top of each slice of bread one slice of cheese. Place over the cheese enough tuna mixture to cover the cheese. Over the tuna place a thick slice of tomato and cover with a second slice of cheese. Finish the sandwiches by placing the last slice of bread on top.
Place in the grill (or on the grill pan) the sandwiches and cook until golden brown and the cheese melts (about 4-6 minutes). Serve each sandwich with some pickles and French fries. Enjoy!
