Recipe for 2
Ingredients:
5 eggs, large
1 large potato, peeled and cut into small cubes
1/2 cup fresh green onions, chopped
1/2 cup of sausage, sliced
2 slices ham, cut into small cubes
1/3 cup fresh milk
4 tablespoons olive oil
1/2 teaspoon, salt
1/3 teaspoon, freshly ground black pepper
Preparation:
In a medium bowl, beat eggs with salt and pepper.Place the oil in a large nonstick skillet and let to warm over medium heat. Put potatoes in the pan and fry for about five minutes, stirring frequently.
Add the sausages, onions and ham and continue frying for another 3-4 minutes.
Remove from heat and make sure that all ingredients are evenly spread in bottom of pan. Pour the egg mixture and return pan to heat. Move the pan in all directions, gently, so that the egg mixture spreads everywhere. Cook until the bottom browned enough.
To remove the omelette from the pan, place a round serving platter, upside down over pan and turn over with a quick but steady movement.
Serve with fresh salad and fresh bread. Enjoy!
