Mixed Seafood Salad and Avocado (Mediterranean Recipe)

Recipe for 4

Ingredients
2 tablespoons mayonnaise
2 tablespoon ketchup
1 tablespoon mustard
1 tablespoon olive oil
1/2 teaspoon ginger powdered
1/3 teaspoon salt
1/3 teaspoon freshly grounded pepper
3 cups lettuce thickly chopped
2 cups (thawed) mixed seafood cut into bite size pieces,(shrimps, calamari, muscles, etc- no bones or shells)
1 large avocado (make sure is ripe)
The juice of one and half large lemons
A handful of fresh parsley
Some black olives

Preparation:
First prepare the dressing. Stir together: mayonnaise, ketchup, mustard, olive oil, ginger, half the lemon juice, salt and pepper in a medium bowl. Refrigerate for at least one hour.
In a medium pot pour enough water and bring it to boil. Add the mixed seafood and the fresh parsley. Simmer on medium heat for about 15 minutes. Remove from heat and drain. Discard the parsley and let the seafood cool to room temperature.
Chop the avocado in half, de-seed and peel. Chop it into thin slices and place them in a bowl. Sprinkle over them the rest of the lemon juice and stir softly with a spoon. Do not crush them.
Bring in front of you 4 plates and start assembling the salads. Firstly lay on each plate enough lettuce. Then portion over them the avocado slices and the (by now) cooled seafood.
Remove from the refrigerator the dressing sprinkle over each salad approximately one and a half tablespoons of dressing. Garnish with some black olives. Serve with some crusty bread and.......Enjoy!
