Summer Tuna Salad (Healthy Recipe)

Recipe for 2
1 can tuna (in water) (160g)
2 cups chopped cabbage
1 cup chopped lettuce
1 medium carrot, grated
1 large tomato, cubed
1 green pepper, chopped
1 small onion, chopped
1 handful thinly chopped parsley

For the dressing:
3 tablespoons mustard
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon powdered ginger
½ teaspoon salt
½ teaspoon,
freshly grounded black pepper


Prepare the dressing first to allow it some time to stand before adding it to our salad. Place in a bowl all the dressing ingredients and whisk well to mix. Place the dressing in refrigerator for at least half an hour or until you prepare the vegetables. Prepare the vegetables and place them in a large bowl. Take the dressing from the refrigerator and add to our salad. Mix all ingredients together until the dressing covers our vegetables. Enjoy with some fresh bread!


Tip: You may also a simple Greek salad!
