Onion Rings (American Recipe)

Recipe for 3-4

Ingredients:
3 large white onions, thickly sliced
1 1/3 cup all-purpose flour
1 teaspoon salt
1/3 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
1 teaspoon baking powder
Enough water for a smooth batter
Vegetable oil for frying

For the Sweet and Sour Sauce:
1/3 cup white or rice vinegar
4 tablespoons brown sugar
1 tablespoon ketchup
1 teaspoon soy sauce
2 teaspoons cornstarch mixed with 4 teaspoons water

Preparation:

Mix together the flour, salt, pepper, baking powder and 1 tablespoon vegetable oil. Gradually whisk in some water until a smooth batter is formed. Refrigerate the batter for 3 to 4 hours before using.
Slice thickly the onions and separate into rings. Deep in the batter and deep-fry in batches in preheated vegetable oil. Turn once and remove when golden brown (1-2 minutes each side).
To prepare the sweet and sour sauce: Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small sauce pan over medium heat. Mix together the cornstarch and water, add to the other ingredients and stir to thicken. Remove from heat and let stand until room temperature.
Serve the onion rings directly from the frying pan with some sweet and sour sauce on the side and a cold beer. Enjoy!
