Delicious Peas (Mamas Recipe)


Recipe for four


If your children hate peas (and most of them do) try this recipe. My mother used this recipe while we were growing up and we never said no to this delicious and simple dish.


Ingredients:
1½ cups green peas (fresh or frozen will do)
1 large onion thinly sliced 
1 large potato peeled, cleaned and cubed
4 scraped artichoke hearts quartered (fresh froze)
2 medium sized carrots peeled and sliced
1 can of mashed tomatoes (approximately 1 cup)
3 cups water
½ teaspoon salt
½ teaspoon freshly grounded black pepper


Preparation:

This recipe is very easy and pretty forward. In a medium sized saucepan add all the ingredients. If you feel that the water is too much or too little, adjust. Cover the pan and place it on medium heat. Occasionally stir but keep it mostly covered. If it is possible let some space using the lid for some steam to escape. This will stop the liquid from over boiling and spilling.
Let it simmer for approximately 45 minutes depending on the heat.
To be sure that your food is ready, using a spoon take a potato piece and check if it is soft enough. The sauce (liquid) in the pan should decrease at least in the half quantity from the original.
Serve with some crusty bread and some yogurt on the side. Enjoy!
