Potato salad with tuna and anchovies dressing

Recipe for 4

3 large fresh potatoes
4 anchovies
4 tablespoons mayonnaise (reduced fat is fine)
Juice of 1 lemon
3 cups lettuce, chopped by hand
1/2 cup spring onions, thinly chopped
2 x 185gr cans tuna in water


Boil potatoes for 35 minutes or until tender. Drain and cool under cold water. Meanwhile, make the dressing by mashing anchovies with the mayonnaise. Add the white wine vinegar or lemon juice and season to taste with black pepper. Tear the leaves from the lettuce into a large bowl. Chop spring onions and add them in. Slice the potatoes and add to the bowl, then drain the tuna and flake into the salad-bowl. Drizzle the dressing over the salad. Cover the bowl and refrigerate for 30 minutes.
