Potato salad with garlicky-mayo dressing

Recipe for 4

1kg potatoes, washed thoroughly, unpeeled, thickly diced
1/2 cup mayonnaise
3 garlic cloves, pureed
1 tablespoon vinegar
1 big handful of parsley, chopped
1 large tomato, diced
Salt and pepper for taste


Dice the potatoes into little cubes, about 1cm each, and boil them in a pot. Drain away the water once the potatoes are just soft, and let them cool.
Meanwhile, make the garlic dressing by blending the garlic, mayonnaise, vinegar and salt and pepper together. Once the potatoes have cooled add the tomatoes and toss.
Mix in the garlic dressing, and then the chopped parsley.
Give it a good toss and cover. Refrigerate for at least one hour.
Serve your potato salad chilled. Enjoy!
