Banana Cake

Recipe for 8-10

Ingredients:
125g margarine, softened
1/2 cup caster sugar
2 eggs
2 large ripe bananas, mashed with a fork
1 1/2 cups self-raising flour
1 teaspoon bicarbonate of soda
1/4 cup milk
Icing
1 1/2 cups icing sugar
30g light cream cheese
juice of 1 orange
orange rind to decorate

Preparation:

Beat the margarine with sugar until light and fluffy. Add the eggs and beat until well combined.
Stir in the mashed bananas. Stir in half the flour to combine. Add remaining flour, the soda and milk, stir until smooth.
Pour the dough into a greased (20cm), round cake tin. Bake in a preheated oven at 180ºC for 30 minutes. Remove from oven and let it stand for 5 minutes before turning out on to wire rack to cool.
To prepare the icing beat icing sugar with enough orange juice to make a firm mixture, beat in cream cheese. Spread over cake and decorate with orange rind.
Serve with vanilla ice cream. Enjoy!
