Fried Zucchini Patties

Recipe for 4

Ingredients:
500g zucchini (about 4), grated
1 onion, finely chopped
2 cloves garlic, finely chopped
3 eggs
3 tablespoons plain flour
1 handful fresh mint leaves, chopped coarsely
2 tablespoons fresh dill, chopped coarsely
200g feta cheese, mashed with a fork
Olive oil for cooking

Preparation:

Heat a large frying pan over a medium heat, add the onion and sauté gently for 3 minutes. Add the garlic and zucchini and continue cooking gently, until they are soft for about 7 minutes.
While this is cooking, beat together the eggs and flour, ensuring there are no lumps. Add the mint and dill, feta and season with black pepper. Do not add salt because feta is salty.
When the zucchini is cooked remove from heat and let cool for 3-4 minutes. When cooled, add the zucchini to the egg and feta mixture and stir to combine. This should create a wet mixture.
Drizzle a small amount of olive oil into a non stick pan and heat to a medium temperature. Spoon enough mixture for a patty in the hot pan. Cook on one side for 2–3 minutes, until browned and then turn over. The patties will still be quite wet at this stage, so take care when turning. Cook the other side for 2 – 3 minutes, again until browned. Drain on kitchen paper and then serve.
Serve the zucchini patties while still hot with greek salad. Enjoy!
