Zucchini and Onions Marinara

Recipe for 4

3 Tablespoons olive oil
2 cloves garlic, finely chopped
4 medium zucchinis, thickly chopped (about 4 cups)
2 large onions, thickly sliced into rings
1 jar marinara sauce (choose a good quality)
1.5 cups water
1/4 teaspoon black pepper
1/2 teaspoon salt


Heat the olive oil in large skillet over medium-high heat. Sauté the chopped garlic, stirring for 2 minutes or until tender. Add zucchini and onions and cook for about 8 minutes or until tender, stirring frequently.
Stir in the marinara sauce, and the water. Season with salt and pepper and stir to mix well.
Simmer for about 25 minutes until sauce thickens, stirring occasionally.
Serve hot with crusty bread and...... Enjoy!
