Mojito Mousse

Recipe for 6-8


Ingredients:
1.5 cups whipping cream
2 teaspoons unflavoured gelatine powder
1/4 cup freshly squeezed lime juice
1/2 cup sugar (divided into 2 parts)
3 tablespoons dark rum
2 teaspoons grated lime zest
1 tablespoon chopped fresh mint
Fresh mint for garnishing


Note: If you are planning to serve it to children instead of rum use 2 teaspoons vanilla sugar


Preparation:

Place a mixing bowl in the freezer for at least half an hour.
In a small saucepan, sprinkle gelatine over lime juice and let stand for 5 minutes. Add one part of the sugar (1/4 of a cup) and the rum. Place the sauce pan over medium-low heat and stir for about 2 minutes or until gelatine and sugar are dissolved. Remove the sauce pan from heat and let the mixture cool completely.
In the chilled bowl, place the whipping cream and the remaining sugar. Whip the ingredients just until stiff peaks form. Add the lime juice mixture, lime zest, chopped mint and fold all the ingredients together.
Divide the mousse among serving glasses or bowls. Cover and refrigerate for at least one hour before serving.
Serve this mousse garnished with some fresh mint leaves. Enjoy!
