Recipe for 8-10 people
Ingredients:
1 cup vegetable oil
4 eggs
1 teaspoon vanilla
1 cup sugar
2 cups flour, all purpose
1 whole orange unpeeled, ripe and juicy
3 teaspoons baking powder
2.5 teaspoons cocoa powder
Preparation:
Chop the unpeeled orange and deseed it. Place it in an electric mixer Puree the orange and add the oil, eggs, sugar. Process the ingredients until combined. Add flour and baking powder and mix to combine until a soft dough is formed.
Grease and flour a round cake tin 20-25 cm (with a hole in the centre). Divide the mixture and place half of it in the cake tin. Sift the cocoa in the remaining mixture and process until the colour changes. Add the remaining mixture into the cake tin. Using a knife mix lightly the brown mixture with the white.
Bake in preheated oven (180oC) for 45-50 minutes. After the first 35 minutes of baking, check with a knife the centre of the cake. When the knife comes out clean it means that the cake is ready.
When done remove from oven and let cool thoroughly. Remove from pan and place on serving platter. Sprinkle with icing sugar or any glazing you like.
Serve with tea or coffee. Enjoy!
