Recipe for 4-6
1kg calamari (squid), bodies thinly sliced
2 tablespoons olive oil
2 cloves garlic, halved
1.5 cups diced tomatoes
1 cup dry white wine
1 teaspoon red wine vinegar
2 bay leaves
1 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Warm the olive oil over medium heat in a medium pot. Add the garlic and cook until fragrant, about 2 minutes. Remove the garlic.
Add the tomatoes, white wine, vinegar, bay leaves, red pepper flakes, salt and pepper. Bring the mixture to a simmer and cook for 7-8 minutes or until sauce starts to thicken.
Add the calamari and stir to combine. Bring the mixture to boil and cook for 10 more minutes.
Serve immediately with crusty bread and Greek yogurt. Enjoy!
