Lokoumades (Cypriot sweets)

Recipe for 8-10 people

Ingredients:
For the dough:
1kg flour
1 pacκ dry yeast
4 cups lukewarm water
Oil for frying

For the syrup:
4 cups water
4 cups sugar
1 tablespoon ground cinnamon
4-5 drops lemon juice
2 cinnamon sticks
3 tablespoons rosewater

Preparation:

Place all the ingredients for the syrup in a saucepan and bring to boil over medium heat for 20 minutes until it thickens. Remove the pan from heat and let cool.
In a large mixing bowl, place the flour and the yeast. Stir and add the water. Mix well to form a runny dough. Cover the bowl and let stand at room temperature for 45 minutes until risen and doubled in volume.
Pour enough oil into a large frying pan for deep frying and heat it over medium/high heat. Take dough into your palm and press it. Cut a small dough ball with a spoon and place it into the hot oil. Repeat the process to fill up the frying pan. Stir the loukoumades with a large spoon until golden/brown.
Remove them from the frying pan and place them in strainer. Let them drain for a minute and place them in the syrup. Stir them to coat with syrup and remove them into a clean serving bowl.
Serve these sweets while still warm. Enjoy!
