Lemon-Ginger Chicken Wings

Recipe for 6-8


Ingredients:
18 whole chicken wings, split
2 cups flour, all-purpose
1/4 cup honey
1/4 cup fresh lemon juice
Zest of one lemon
1 clove garlic, minced
3 tablespoons fresh ginger, grated
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Vegetable Oil (for deep frying)
3 tablespoons water


Preparation:

Mix in a small sauce-pan the lemon juice, ginger, honey, garlic, lemon zest and water. Place over low heat and simmer for 12 minutes, to set the sauce. Remove from heat and preserve warm.
Place the flour, salt and pepper in a plastic bag and shake the chicken wings in the flour to coat. Place enough vegetable oil in a large skillet and heat well. Deep fry the chicken wings until golden brown and cooked thoroughly. Remove from skillet and drain over paper towels.
Place the chicken wings in a large serving platter and pour over it the sauce.
Serve while still hot with steam rice. Enjoy!
