Recipe for 15-20 muffins
Ingredients:
1-3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons unsweetened cocoa
1 egg
3/4 cup chocolate chips (plus more for sprinkling later)
1 cup milk
1/3 cup vegetable oil
3/4 cup sugar
1 teaspoon vanilla extract
Preparation:
Preheat your oven to 200oC and fill muffin tin with paper cups.
Sift flour, baking powder, baking soda, sugar and cocoa into a large bowl. Place the egg, milk, vegetable oil and vanilla into another bowl and whisk to combine. Pour the liquid mixture into the bowl with the dry ingredients. Stir both together, just to mix them. Remember; do not beat the ingredients extensively.
Add the chocolate chips and combine with soft movements.
Spoon enough mixture into the muffin cups but do not overfill them.
Sprinkle more chocolate chips on top, then cook for 20 minutes in preheated oven until muffins are golden on top, risen and springy.
Serve them at any time of the day. Enjoy!
