Recipe for 2
5 large eggs
1 medium zucchini, sliced
1 tablespoon olive oil
1 tablespoon butter
1/3 cup fresh milk
1/2 teaspoon salt
1/3 teaspoon freshly ground black pepper
6-7 leafs fresh basil, washed and chopped by hand
Beat lightly the eggs in a bowl. Add the milk, salt and black pepper and whisk to combine.
Preheat a grill type pan and the olive oil. Grill the zucchini for two minutes each side until soft.
Place the butter in a non stick frying pan. Let it melt until it foams over medium heat. Add the egg mixture and cook until golden brown and flip over to cook both sides. When flipped over place on top the grilled zucchini and sprinkle with the chopped basil. Let it cook until golden brown in the bottom.
Serve directly from pan with Greek salad. Enjoy!
