Jacket Potato Stuffed with Tuna (Xs Recipe)

Recipe for 2

Ingredients:
2 large potatoes
1 large can of tuna, in water
2 tablespoons olive oil
1 medium onion
1/2 cup fresh parsley, chopped
Juice of one lemon
Salt/Pepper

Preparation:

Microwave oven method: Wash thoroughly the potatoes and fold them tightly in a paper towel. Pass the potatoes under running water so that they get very wet. Press with your hands the paper towel on the potato to drain the excess water. Place the potatoes in the microwave and cook them for 10 minutes. To be sure that the potatoes are cooked use a pointy knife and stick it in the potato. If it comes out easy then is done if not then cook for 2-3 more minutes.
Conventional oven method: Wash thoroughly the potatoes and fold them tightly in aluminium foil. Bake them in 200oC for one hour and then stick in a pointy knife. If it comes out easy then is done if not then cook for 15-20 more minutes.
Meanwhile you can prepare the stuffing: In a bowl place the tuna (drained from any water) and flake it with a fork. Then add olive oil, parsley, the lemon juice, and a pinch of salt and pepper. Finally grate the onion in the bowl with rest of the ingredients and stir to mix.
When the potatoes are done and while still hot carve them (lengthwise and halfway) and using your fingers lightly press them to open. Insert a fork inside the potato and flake lightly its flesh however do not remove it. Add a generous portion of the tuna mixture inside the potato.
Serve while still hot. Enjoy!
