Recipe for 4
500g spaghetti pasta (preferably spaghettini)
1 large onion, chopped
1 can tomatoes, coarsely chopped
1/2 teaspoon salt
1/3 teaspoon freshly ground black pepper
3 tablespoons olive oil
1/2 cup white wine, dry
7-8 fresh basil leaves, chopped
1/2 cup water
1 teaspoon sugar (or 1 tablet sugar substitute)
Parmesan cheese, grated
In a large skillet heat the olive oil over medium high heat. Add the chopped onion and continue stirring until onion is translucent and add the tomato and water. Stir and season with salt and pepper. Cover and simmer over medium heat for 10 minutes. Add the wine and simmer for 10 more minutes or until the sauce thickens, stirring occasionally.
Meanwhile, prepare the spaghetti according to package directions for al dente. Drain and place under cold water to stop cooking. Add and stir two tablespoons of olive oil and set on the side.
As soon the sauce thickens add the chopped basil and sugar and remove from heat. Stir and add the cooked pasta. Serve hot, topped with grated cheese. Enjoy!
