Recipe for 2-3
Ingredients:
5 eggs
1 small onion, chopped
3 large tomatoes, grated
1/2 cup crumbled feta cheese
1 teaspoon dried mint
1/3 teaspoon salt
1/3 teaspoon black pepper powder
3 tablespoons olive oil
Preparation:
Place in a pan the olive oil and heat on medium temperature. Add the onion and sauté until translucent. Add the tomato and feta cheese and continue to sauté, stirring until most liquids evaporate.
Meanwhile in a bowl, beat eggs with mint, salt and pepper.
Add the egg mixture into the pan and using a fork, mix all ingredients together until the egg stands.
To serve this dish as a complete meal, serve with fresh bread and fresh salad. Enjoy!
