Healthy Egg-Potato Salad (Mediterranean Recipe)


Recipe for 4

Ingredients:
3 medium potatoes, boiled
4 radishes, thinly sliced
4 eggs, hard boiled
3 tablespoons mayonnaise (low fat/light)
3 spring onions, chopped
2 tablespoons olive oil
Juice of 1 lemon
1/2 teaspoon paprika powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Preparation:
Cube the boiled potatoes (should be cold enough before cutting) and place in a large salad bowl. Add the radishes, lemon, olive oil, onions, salt, pepper and paprika and stir until the liquids are absorbed by the potatoes. Add the mayonnaise and stir to coat all ingredients in bowl.
Slice the eggs and place over the rest ingredients in bowl. If you prefer a more sour taste add some more lemon.
Cover the salad and refrigerate for at least an hour.
This salad is perfectly served with grilled sausage and dry white wine. Enjoy!
