Greek Zucchini Balls (Delicious Recipe)

Recipe for 6-8

2 large zucchinis, grated
1 large onion, grated
1 egg
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons chopped fresh mint
2 tablespoons olive oil
1/3 cup crumbled feta cheese
Vegetable Oil for frying

Place all ingredients (except flour) in a large bowl. Mix with hands to combine all the ingredients together.
Begin adding flour little by little and knead the ingredients together. Flour is added until the mixture is not too moist. To be sure if more flour is needed or not, get enough mixture in your palm and shape a medium ball. If it does not stick in your hand and it is easily shaped then it is ready. Shape the whole mixture into balls of equal size and set aside.
Place enough vegetable oil in a large pan and let it warm on high heat. Place some zucchini balls into the pan while leaving enough room for flipping. Once browned on one side flip and cook more. When golden brown on both sides remove and drain on kitchen paper.
Serve hot with fresh yogurt. Enjoy!
