Recipe for 4
Ingredients:
750g. variety of vegetables, thickly chopped
(E.g. cauliflower, broccoli, carrot, onion rings, zucchini, etc.)
2 cups flour
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 teaspoon mustard powder
1 teaspoon baking powder
Water (for batter)
Vegetable oil for frying
Preparation:
Sift the flour, in a large bowl. Add salt, pepper, mustard and baking powder and mix well. Begin adding water little by little and stir with a fork until it becomes a soft batter.
In a large skillet add enough vegetable oil and let it warm over medium heat. Place the vegetables (in portions) into to the bowl with the batter and stir to coat well.
Remove the vegetables from the batter without draining them and place in the skillet. Allow to fry until golden brown on one side and then turn over to cook both sides. Place in a dish some kitchen paper and drain the excess fat from the vegetables before serving.
Serve warm with some yogurt. Enjoy!
