Recipe for 4-6
1kg cod fillets
3 tablespoons margarine
6 tablespoons all-purpose flour
2 cups milk
Salt and ground black pepper
1 1/2 cups shredded Cheddar cheese
2 tablespoons chopped parsley
1/3 teaspoon nutmeg, powder
Preheat oven to 175oC. Grease a large baking dish.
Bring a large pot of lightly salted water to a boil. Add the cod fillets and cook for 5 minutes. Remove from heat and drain.
Melt margarine in a medium saucepan. Remove from heat and mix in the flour and milk. . Season with the nutmeg, salt and pepper. Return to stove over medium heat, and stir until thickened
Slightly flake fish with a fork and lay it into the baking dish. Sprinkle it with the parsley and pour over it the thick sauce. Sprinkle top with shredded cheese.
Bake in the preheated oven for 20 to 25 minutes, or until cheese is browned. Serve with some fresh crusty bread. Enjoy!
