Ultimate Veggie Burger (British Recipe)

Recipe for 4

Ingredients:
1 can kidney beans, drained, and rinsed
1/2 cup breadcrumbs
1/2 cup mushroom, finely chopped
1/4 cup onion, finely chopped
1 carrot, shredded
1/2 cup red bell pepper, chopped
1 clove garlic, minced
2 tablespoons ketchup
1/2 teaspoon salt
1/3 teaspoon pepper
1 large egg

Preparation:
Throw all ingredients in a food processor or a blender. Pulse (or blend) until vegetables thinly chopped. Do not purée the mixture as it should have some texture. If it gets too moist add some more breadcrumbs.
Shape the mixture into 4 thick patties. Do not cook them immediately as the patties will mash. For a better result wrap and freeze them for at least one hour.
To cook, preheat a grill pan on high heat and a teaspoon of olive oil. Remove the patties from the freezer and place them directly on the grill. Cook on low heat for 2-3 minutes on one side and then turn over. Cook and turn until well browned (10-12 minutes) and warm in the middle. You may also cook the patties in the oven until well browned (200oC). Serve like you do your favourite regular hamburgers. Enjoy!
