Traditional Potato-Balls (Greek Recipe)


Recipe for 6 people

Ingredients:
1.5 kg potatoes
1/2 cup grated cheese (not salted)
3 eggs
3-4 tablespoons flour
1/3 cup chopped parsley
1/2 teaspoon salt
1/3 teaspoon ground black pepper
1/3 teaspoon nutmeg, powder
Vegetable oil for frying
Flour for shaping

Preparation:
Peel, wash and boil the potatoes and puree them. Pour puree into a large bowl. Add eggs, cheese, flour, parsley, salt, pepper and nutmeg. Knead all the ingredients in the bowl together to create a smooth dough.
When the dough is cold enough cut by hand small pieces, and start shaping them in the size of a regular meatball.
The dough will be sticky therefore during the molding place enough flour in your palms. When each potato-ball is shaped, cover its’ outer part with enough flour.
Pour enough oil into a large frying pan and heat it over medium heat. Fry the potato-balls until they get a golden-brown color. Be very careful not to puncture them while frying, because this will cause them to burst and the result will not be nice. Serve them warm. Enjoy!
