Penne Napolitana (Italian Recipe)


500gr penne
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, crushed and thinly chopped
2 cups tomatoes, undrained and mashed
1/2 a cup red wine
1 tablespoon chopped flat leaf parsley
1/2 tablespoon oregano
1/3 teaspoon freshly ground black pepper
1/3 teaspoon salt
Fresh parmesan cheese (grated)

Preparation:

To make the sauce, heat the olive oil in a saucepan over a medium heat.
Add the chopped onions and garlic and cook, stirring, for 2-3 minutes or until glossy.
Stir in the tomatoes, wine, oregano, salt and black pepper to taste. Bring to boil and simmer for 15 minutes or until sauce reduces and thicken. Two minutes before you remove from the heat at the parsley and stir.
Prepare the pasta according to the producer’s instruction. Add the penne in the sauce pan with the sauce and stir until well combined.
Sprinkle with some parmesan and serve hot. Enjoy!
