Stir fried chicken seasoned with soy sauce (Chinese Recipe)

Recipe for 4

Ingredients:
500g chicken breast fillets, boneless and skinned, cut into cubes
1/4 cup salt-reduced soy sauce
2 tablespoons honey
2 tablespoons cooking oil
1 large onion cut into thick wedges
1 teaspoon fresh ginger, peeled, cut into thin strips
2 cups thinly sliced (matchsticks shape) vegetables (carrots, cucumber, zucchini, bell peppers –any colour, cabbage, celery, etc)
Salt and pepper

Preparation:
Heat the oil (high heat) preferably in a wok and stir-fry the chicken with the ginger until lightly golden. Add the onions till they are glossy. Start adding the vegetables you prepared, by adding first the harder ones. For example if you prepared all the above mentioned vegetables then you should start with the carrots and the celery and finish with the cucumber and the cabbage. Each time you add a vegetable into your wok you should stir it for 30sec to 1 minute before you add the next one. Season with some salt and pepper.
Add the Soya sauce and the honey in a glass and stir until they mix well. If your honey is too thick add some more soya sauce. Add the mixed honey and soya sauce into the wok with the chicken. Stir well for 3-4 minutes until the sauce is all over the ingredients. Do all this over high heat.
Serve hot with some rice. Enjoy and try to use chop sticks!
