Summer Pasta Salad (Mediterranean Recipe)


Recipe for 4

Ingredients 1/2 kg of Pasta (preferably rotini/ twists)
1/2 cup diced colored bell peppers
3 slices ham, cut into squares
1 cup chopped celery
1 cup chopped fresh onion
3 tablespoons olive oil (2 of them are for cooking the pasta)
3 tablespoons mayonnaise
1 teaspoon salt (1/2 is for cooking pasta)
1/3 teaspoon pepper powder
2 tablespoons grated Parmesan cheese

Preparation:
Cook pasta in water, with half of the salt and 2 tablespoons of olive oil. When cooked drain well the pasta and cool under running water. Place the cooled pasta in a salad bowl and add the rest olive oil. Stir well.
Add to the salad bowl the bell peppers, ham, celery, onion, mayonnaise, powdered pepper and grated Parmesan. Mix well and place the salad in the refrigerator for about an hour. Enjoy!
