Recipe for 4
4 red peppers
2 green zucchinis, thickly chopped
1/2 cup bulb fennel, thickly chopped
1 red onion, thickly chopped
1 small can corn, not sweet
200gr. Halloumi, thickly sliced
Salt and pepper for taste
Cut the peppers in half and remove core and seeds.
Chop the zucchinis, fennel, red onion and place in a large bowl. Add the corn in the same bowl and toss to combine. Divide the veggies and spoon them into the red peppers. Season each pepper with salt and pepper. Wrap each pepper into aluminium foil, leaving no gaps for steam to escape. Place on a BBQ grill and cook for 20-22 minutes turning occasionally. Remove from grill and let stand for a while before opening.
Slice the halloumi cheese into 4 parts and grill on each side until golden.
Remove and carefully unwrap the peppers from the hot foil.
Serve the stuffed peppers topped with the halloumi. Enjoy!
