Recipe for 4
4 cups freshly shredded carrots
1/2 cup finely chopped fresh mint
1/2 cup finely chopped fresh cilantro
1/4 cup thinly sliced green onions
2 tablespoons fresh lime juice
1 teaspoon Tabasco sauce (You may add a little more if you want it more spicy)
3 tablespoons extra-virgin olive oil
Salt and fresh-ground black pepper to taste
Preparer the vegetable: carrots, mint and cilantro and place all together into a salad bowl.
In a small bowl combine together the lime juice and Tabasco sauce. Add and whisk in the olive oil. Season with salt and pepper and mix a bit more.
Add dressing in to the salad bowl with the vegetables. Give it a good toss to coat the vegetables with the dressing. Check the taste and add if needed a little more salt and pepper.
The trick with this salad is that if you can resist and keep it in the refrigerator overnight it marinates itself and it is tastier.
