German Potato Salad with Whole Grain Mustard

Recipe for 6

1kg boiling potatoes peeled and cubed, about 6 cups
1/4 cup vinegar
4 tablespoons olive oil
2 tablespoons whole-grain mustard
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup scallions, finely chopped


Boil potatoes in a large pot of salted water until tender, about 30 minutes. Check if cooked by inserting a fork in the centre of the potatoes. When ready, drain in a colander peel and cube. Transfer to a large salad bowl and stir in scallions.
Meanwhile, place in a bowl the vinegar, the mustard, the oil, the sugar, salt and pepper. Stir to mix until smooth dressing.
Pour dressing over hot potatoes and gently stir to combine. Taste and adjust the seasoning.
Serve your salad warm with crusty bread. Enjoy!
