Veggie Tacos

Recipe for 4

8 taco shells
1 tablespoon olive oil
4 large white mushrooms, sliced
1 green bell pepper sliced
1 cup shredded carrot
1/3 cup water
1 cup shredded lettuce
1/2 cup shredded cheese
1/3 cup hot or medium salsa


Place in a large skillet the oil over medium heat. Let it warm and sauté the carrots for 2 minutes. Then stir in the mushrooms and the sliced bell pepper. Let it cook for 2 more minutes stirring occasionally. Add the water and hot salsa, lower the heat, stir and cover. Simmer for 4-6 minutes, uncover and cook for 5 more minutes until sauce thickens.
Divide the sauce mixture while still hot into the taco shells. Top with shredded cheese and lettuce.
Serve the veggie tacos with a cold beer. Enjoy!
