Recipe for 4
2 whole chicken breasts, no bone and skin
4 tablespoons olive oil
Juice of one large lemon (or from 2 small)
1/2 teaspoon dried marjoram
1/3 teaspoon grounded black pepper
1/2 teaspoon salt
Wash thoroughly the chicken and place in strainer for a few minutes. Cut the chicken into strips and place in a clean bowl. Add the olive oil, lemon juice, marjoram, pepper and salt. Toss the ingredients to coat the chicken. Cover and refrigerate for at least an hour.
Thread the chicken on the skewers (one skewer per chicken strip). Preheat a grill pan over high heat, and then bring the heat to medium.
Grill the chicken for 3-4 minutes on each side or according to your preferences.
Serve the chicken with rice and tomato sauce. Enjoy!
