Tuna and Potato Brandade

Recipe for 6


Ingredients
3 medium size fresh potatoes
200gr. can tuna in water, drained
1 cup heavy cream
2 tablespoons grated Parmesan cheese
1/3 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon ground cinnamon
6 tablespoons shredded mozzarella cheese
2 teaspoons breadcrumbs
1 tablespoon chopped fresh parsley


Preparation:

Wash thoroughly and cook the potatoes in a medium pot of boiling salted water for 30-40 minutes, until very tender. Drain the potatoes. Peel them and put them back in the pot and mash them while they are still hot.
Meanwhile, heat the heavy cream in small saucepan with low heat, until reduced almost by a third. Preheat the oven to 190oC.
Add the reduced heavy cream, drained tuna, Parmesan cheese, cinnamon, salt and pepper in the mashed potatoes and mix well.
Transfer the mixture into 6 ramekins and place them on a sheet pan. Divide evenly and sprinkle the top of each ramekin with shredded mozzarella cheese, breadcrumbs, and chopped parsley. Bake in preheated oven for 20 minutes.
