Recipe for 6
1/2 cup ham thinly chopped
1 cup cheddar cheese, grated
2 tablespoons mixed fresh herbs (basil, oregano and chives), finely chopped.
2 tablespoons butter
1/2 teaspoon freshly ground pepper
1/2 teaspoon salt
Pre-heat oven to broil.
Crack all the eggs in a medium mixing bowl and add pepper and mixed herbs. Beat lightly until combined.
Heat a medium oven safe, non-stick pan over medium heat. Add the butter and let it melt. Add egg mixture and sprinkle on top with ham and cheese. Cook 4-5 minutes or until edges are set.
Place the pan in the oven and broil for an additional 4-5 minutes or until eggs are lightly golden browned on top. Carefully slide the frittata out of the skillet, onto a cutting board, and cut into serving portions.
Serve the frittata garnished with fresh green salad. Enjoy!
