Chicken Schnitzel

Recipe for 2

2 chicken breasts (no bone and skin), pound and flatten to 1cm thick
1/2 cup all-purpose flour
1 teaspoon salt
1/3 teaspoon pepper
1 beaten egg
3 tablespoons fresh milk
3/4 cup fine dry bread crumbs
1 tablespoon paprika
3 tablespoons butter, unsalted


In a bowl place the salt, pepper, paprika and flour and whisk to mix. Place the chicken fillets in the flour mixture and coat thoroughly.
Combine egg and milk in another bowl. Dip the floured chicken fillets in egg mixture, and then immediately in the bread crumbs.
In a large skillet add the butter and melt it over medium heat. When the butter starts to foam add the meat and cook it for 2 to 3 minutes on each side until golden. Remove from pan to platter lined with kitchen towel to drain.
Serve the schnitzels warm with fresh salad and ketchup on the side. Enjoy!
