Cashew Chicken

Recipe for 4

Ingredients:
500gr boneless and skinless chicken breast, (cut into bite size cubes)
1/2 cup cashew nuts, unsalted
1 large green bell pepper, thickly sliced
2 tablespoons gated fresh ginger
1 large onion, thickly chopped
1 tablespoon oyster sauce
1 tablespoon soy sauce
1/2 teaspoon freshly grated black pepper
1/2 teaspoon sugar
1 tablespoon sesame oil (or olive oil)
1/2 teaspoon salt

Preparation:

Add in a bowl the oyster sauce, the soy sauce, the black pepper, the sugar and the salt. Whisk well to mix the ingredients for a sauce.
Place the sesame oil in a wok and warm it over high heat. Add the chicken in the wok and stir for 2-3 minutes (until the meat is white). Add the onions, cashew nuts and ginger; stir for 2-3 minutes. Then add the bell pepper and continue stirring for 2-3 minutes.
Add the sauce and continue stirring to coat the ingredients in the wok with it. Remove the wok from heat.
Serve the chicken over steamed rice and….. Enjoy!
