Recipe for 4
1kg cod fillets, cut into serving sized pieces
1 cup of beer
1.5 cups flour (for the batter)
1 teaspoon baking powder
1 large egg (lightly beaten)
1/2 teaspoon salt
1/3 teaspoon freshly ground black pepper
1/2 cup flour
3 medium potatoes, peeled and cut into wedges
Vegetable oil for frying
Preheat enough vegetable oil for deep frying. Deep fry the potatoes until golden brown and crispy. Remove from frying pan, season with salt and place on paper towel to drain. Keep the frying pan on heat to use it for the fish.
In a bowl mix the beer, 1.5 cups of flour, baking powder and egg into a batter. Season the fish with salt and pepper.
Dredge the fish in the flour and shake off any excess. Dip the fish into the batter. Fry the fish in the preheated oil until golden brown and crispy, about 4-5 minutes.
Serve the fish with the potatoes and……. Enjoy!
