Recipe for 2
Ingredients:
2 cod fish fillets (about 200g each)
2 tablespoon olive oil
1/3 teaspoon freshly ground black pepper
1/3 teaspoon salt
1 teaspoon fresh ginger, thinly chopped
3 tablespoons soya sauce (choose light)
Preparation:
Mix soya sauce, with ginger, salt and pepper thoroughly in a small bowl. Clean the fish. Pat dry with kitchen towel and place on a deep ceramic dish.
Spread the soya sauce mixture over the cod. Cover with plastic wrap. Set aside in the fridge for 1 – 2 hours.
Lightly scrape off (using a spoon) or wipe off (using fingers) any excess soya sauce mixture on the cod.
Heat up olive oil in a non-stick frying pan. Pan-fry the cod fillet with medium heat for about 3-5 mins, turn to another side to pan fry for another 3-5 mins or until it is golden brown.
Serve directly from pan with boiled rice. Enjoy!
