Lachmatzoun or Laxmatzoun (Armenian Recipe)

Recipe for 4-6

500g. minced beef meat
1 medium onion, chopped
2 cloves garlic, puréed
2 ripe tomatoes, grated
1 large chili pepper, grated
1/2 teaspoon sumac
1/2 teaspoon salt
1/3 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons tomato paste
1 cup chopped parsley
For the dough:
500g. flour
1/2 teaspoon salt
Water for kneading

In a large bowl, sift the flour, add salt, little water and knead until dough thickens and becomes smooth. Cover the dough with a towel and set aside.
In another bowl, prepare the filling. Place the minced meat, the chopped onion, garlic, tomatoes, grated pepper, sumac, salt, pepper, tomato paste and parsley. Knead the filling and set aside.
Preheat the oven to 200oC.
Divide the dough into as many equal parts as you want. Turn each part into a thin round shape (circular) pie. Spread over the entire surface of each pie enough meat filling, but make sure that it is flat.
Place the pies side by side in a large pan (meat facing up). Place in the oven and bake until pie is golden (about 5-10 minutes depending on the oven and the size of the pies you prepared). Repeat with as many pies you want.
Serve warm with lemon. Enjoy!
