Yummy red snapper fillet baked the oven (healthy recipe)


Recipe for two

Ingredients:
2 red snapper fillets (make sure there are no bones)
2 gloves garlic
1 small green bell pepper cut into thick slices
1 small onion thickly chopped
1 tablespoon lemon juice
2 tablespoons olive oil
1 teaspoon fresh ginger chopped
3-4 lemon slices (optional)

Note: for cooking you need two sheets of either aluminium foil or parchment paper.

Preparation:

Place on a table top the two sheets of paper or foil. Place the fillets in the middle of the sheets and season with salt and pepper. Sprinkle the fillets with the lemon juice and the olive oil. Distribute equally on the fillets the bell pepper slices, the garlic, the onion and the lemon slices. Fold the parchment over the ingredients and crimp the edges to create a closed pouch. Do not tighten it over the fillet. Let some space available for steam to produce inside the pouch but not to escape.
Preheat the oven at 200oC and bake the fillets for 15 to 20 minutes until the fish flakes easily with a fork. Serve with a jacket potato and steamed vegetables. Enjoy!
